REFLECTION QUESTIONFood compostingProducing uneaten food squanders many resources—seeds, water, energy, land, fertilizer, hours of labor, financial capital. Which of these motivates you the most to change your behavior regarding food waste?
Lauren Clark 4/13/2018 3:01 PMThe hours of labor and the time and resources needed to produce our food astound me. We owe it to our farmers to respect our food and not squander the bounty of their labor.-
Elizabeth Dunham 4/17/2018 8:26 AMAgreed! I am trying to be more self conscious about food waste, and I can't wait for the Sara Hardy market to start next month!

REFLECTION QUESTIONWomen and Girls Support Women-Owned BusinessesGlobally, women typically invest a higher proportion of their earnings in their families and communities than men. How can you better support communities by supporting women?
Lauren Clark 4/13/2018 2:59 PMI would like to support the women already actively working in my community with social justice and human needs campaigns. My local peace group is woman founded and the groups helping children in our schools are majority women. I will do this through, monetary and item donations, supporting their activities and by spreading the word of their good work. -
REFLECTION QUESTIONFood Keep Track of Wasted FoodAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Where would you rather use this money?
Lauren Clark 4/13/2018 2:56 PMI would rather use the extra money I can save on reducing food consumption to travel!

REFLECTION QUESTIONFood Zero-waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Lauren Clark 4/13/2018 2:53 PMSoups are excellent ways to utilize whole vegetables. Sauteing chopped onion, celery and carrot and reserving the peels, skins and leaves. Adding stock or water to veggies and adding in reserved "waste" to boil into flavorful stock. Many types of leftovers can be added to make great soup after stock has reduced; chicken and rice, steak and potato, tofu and spinach, the opportunities are endless.
