  • REFLECTION QUESTION
Food Keep Track of Wasted Food

We decided to keep track of food we throw away and try to figure out if there is a better way of using scraps such as bell pepper cores, orange peels, and carrot peels. We have been keeping track to see if there is any variations we can make in our diet, and if we do throw anything away.
  • REFLECTION QUESTION
    Food Zero-waste Cooking
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

I will start collecting them to make broth with!

The reflection questions don't show up with the answers, but I'm assuming you are talking about vegetable scraps :) I make broth with it often. I also season and reduce it, pour it into ice trays so I have it when I need it. And then compost the remaining waste.
