    This whole week I have eaten plant based meals. I usually stick to rice/noodles and veggies for an easy plant based meal.

    Today I looked up a bunch of new recipes for 2 because I usually make too much food and end up wasting some. I made zucchini pasta with tomato sauce which left us with zero waste for dinner!

    The plant based diet has been going pretty well and surprisingly easy. There are many options in Portland for plant based diets so It has been going well.

      I miss all of the vegan restaurants in Portland! Even if you aren't vegan the food is worth trying. It's super easy in a place like Portland to eat plant based. I'm glad you have taken on the challenge of trying it out! I think it's a surprise to everyone who tries that lifestyle how easy it actually is.

    Yesterday I ate all waste free meals. For breakfast I had a peanut butter and jelly sandwich, for lunch I had rice and beans and for dinner I had pasta. I didn't throw any food away and made the correct proportions.

    Last night I made a waste free meal and today my lunch was waste free as well.

    This week I have cooked at least one meal a day that was zero waste. It is hard for me to get portion sized correct so I'm going to focus on eating the food that I save as leftovers instead of just letting it sit in the fridge.

    4 days of this week I ate meatless meals. I want to cut meat out of my diet and only eat plant based foods. I am having some trouble not eating dairy, but I am going to try and cut that out as well.
