I will keep a daily log of food I throw away during the EcoChallenge, either because it went bad before I ate it, I put too much on my plate, or it was scraps from food preparation.

REFLECTION QUESTIONFood Reduce Animal ProductsWhat do you think contributes to people in North America eating more meat than other countries, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?
Shawna Cain 4/07/2018 12:47 PMI think Americans eat more meat than any other country because of the cultural mindset that a meal requires meat. The old food pyramid engrained this into us at a young age, and so it's easy to feel like we're missing out if we opt for plant based alternatives. However, nowadays there are so many amazing food products and plant based culinary delights that often the plant based option is more appealing to me than the meat products. I've been exploring this world lately, and am constantly surprised the new selection of delicious options. What's your favorite plant based meat alternative? -
REFLECTION QUESTIONTransport Improve a Bus StopHow can you advocate for transportation systems which minimize environmental impact while also meeting human needs?
Shawna Cain 4/05/2018 8:22 PMI just contacted Tri-Met, Portland's public transportation system to request improvement at my nearest bus station. I was surprised to find it was so accessible - seems they wanted to hear from me!
The improvement I called about is a bus stop temporarily relocated in front of a neighbors house because of construction (another residential house turned condo/apartments). In the meantime, my neighbor is getting lots of trash thrown in her flower beds and yard from riders because there is no trash can. I requested a trash can be added, and asked for other beautification tips.
What would you like to see at a bus stop? I am thinking a poem or art work will be a nice surprise. -
REFLECTION QUESTIONFood Keep Track of Wasted FoodAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Where would you rather use this money?
