What do you think contributes to people in North America eating more meat than other countries, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?

I think we're already shifting generationally toward a less meat-focused culture. I'm not sure why we eat more meat than other countries - is the cost of meat lower in the US? I think our parents and grandparents were of the mindset that each meal must have meat but my generation (Gen X) and the younger generations don't seem to be so hung up on this.
