Nicole Voss 4/19/2018 11:20 AMI had not heard the term, but I had been familiarized with the concept in Dan Barber's Third Plate. The effect on limiting the amount of nitrogen in the system is the greatest benefit. -

Nicole Voss 4/10/2018 12:52 PMNorth Americans feel entitled to meat. Meat focussed, paleo diets are also super trendy right now - cutting back on our fear of carbs would help. -
REFLECTION QUESTIONFoodFun fact: Your brain and stomach register feelings of fullness after about 20 minutes of eating. While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come out of this?
