    Food Reduce Animal Products
What do you think contributes to people in North America eating more meat than other countries, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?

This was definitely pretty easy given I never eat meat with my breakfast anyway during busy weekday mornings, but making sure I didn't, even on weekends was a simple, hopefully helpful step towards sustainability.

Most people didn't respond, although 2 people commented things along the lines of "why do you think that is?" or "does it happen in the US?".

Uunmet needs are especially high for adolescents, migrants, slum dwellers, refugees, and women in the postpartum (according to the WHO). I learned that, although it would be expensive (around 3.6 billion USD) to meet all unmet needs in developing countries, it would be cheaper than the alternative, which is many more children and many more suffering women.

Women and Girls Support Women-Owned Businesses

By investing in women's companies, the women who are employed by and run the company will invest that money into their communities, and support communities as a result.

    Land Use Forest-Friendly Foods 1
How is your diet currently impacting deforestation? What can you do to decrease your negative impact and increase your positive impact?

    James Henderson's avatar
    James Henderson 4/25/2018 8:32 PM
My current diet negatively impacts deforestation because it involves eating bananas that aren't always rainforest alliance certified. I can change that by making sure my tropical fruits have a rainforest alliance logo on them.

    Land Use Forest-Friendly Foods 2
How difficult or easy was it to change your diet?

    James Henderson's avatar

It was easy to change my diet. I don't eat that many processed foods to begin with, and it was easy to find rainforest alliance certified chocolate and tea.

Land Use Choose Better Wood Products
Beyond carbon sequestration, what other benefits do forests offer you personally?

    James Henderson 4/25/2018 8:29 PM
Forests offer me clean air to breath, and they have a role in temperature regulation. They are also the source for the antibiotics I needed when I got an ear infection, and the paper I write on everyday at school.

Food Learn the Truth About Expiration Dates
Now that you know the difference between use by, sell by, and best by dates, how will you view expiration dates differently?

    James Henderson's avatar
    James Henderson 4/25/2018 8:28 PM
I won't immediately throw something away if it says "sell by" or "best by" -- I'll give it a shot. I'm also going to do further research on the expiration dates of products like sunscreen and drugs; perhaps some of those can be taken with a grain of salt as well.

    Food Zero-waste Cooking
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

Herb stems can be used to make broths or very finely chopped to use in sauces. Citrus peels can be made into zest. Radish and onion greens can be added into salads. If you have too many herbs, you can preserve them by adding either an acid (lemon juice) or a fat (olive oil).

I learned that increased adoption of reproductive healthcare and family planning is an essential component to achieve the United Nations’ 2015 medium global population projection of 9.7 billion people by 2050. This is very important because our population is only increasing and we have to started preparing for this and coming up with ideas to help us sustain all of the people on earth. I also learned that if investment in family planning, particularly in low-income countries, does not materialize, the world’s population could come closer to the high projection, adding another 1 billion people to the planet.
