This challenge motivated me to finally do my big recycling run that I have been avoiding for years!  I brought in a big bag of batteries/lightbulbs to Orchard Hardware Store, brought some e-waste to Free Geek, and left some other items in the Gaia box near my house.  Unfortunately, I wasn't able to recycle the plastic bags as New Seasons no longer accepts them due to the new plastics restrictions.  If anybody knows of somewhere that recycles plastic bags, shoot me an email!  :)

I decided to cut meat out of my diet since this challenge and I haven’t missed it at all. There are so many different options available to vegetarians and vegans so it has been pretty easy for me. My body feels better too. I seem to have more energy.

I decided to eat at least one meatless or vegan meal each day of this challenge. I learned that it's not hard to cut meat out of my diet and my groceries were actually cheaper. I don't eat a lot of meat in general but making sure I was eating one meal as a vegetarian/vegan made me become more aware of what I was eating. It also felt good knowing that I was not contributing to climate change as much when I did opt out of the meat. I decided I want to continue this life style and for my next challenge, I'm going to go full vegetarian! Hopefully forever!

So far it seems super streamlined and like a great source of information on a subject I want to be better versed in.

Honestly, seeing how our climate has changed drastically in the last ten years as well as understanding the impact everyone has on our world in the most basic ways.

    Materials Recycle Everything I Can
How could you incorporate other "R's" -- reduce, reuse, refuse, repair, repurpose, etc. -- into your lifestyle?

I have been collecting a bunch of items that aren't recyclable by the city of Portland in a closet (for years now).  Anybody know if New Seasons is still accepting plastic bags?  My go-to recycling center closed so I'm also looking for a new place to recycle e-waste like cords, broken electronics, etc.

    Food Reduce Animal Products
What do you think contributes to people in North America eating more meat than other countries, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?

This is such a difficult question!  But I think part of it is about the habits we keep.  After eating very little meat for years it is now second nature to me.  I have even converted my Texan husband to a partial vegetarian.  But when I slip into eating more meat it is easy to forget and not worry about it.  I am re-committing to my diet of no meat except occasional local salmon and sustainably raised chicken (from my friend's awesome farm!)

    Food Smaller Portions
Fun fact: Your brain and stomach register feelings of fullness after about 20 minutes of eating. While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come out of this?

Additional benefits would be maintaining a healthy weight, and saving money.
