    Health benefits are an added bonus to eating smaller portions. American's consume many more calories then they need each day (on average). Eating smaller portions would help with obesity, cholesterol, blood sugar, etc. Economic benefits would include lower food costs and may also result in less waste.

    I think this steams from being, historically, an agricultural country with a lot of room for grazing and animal husbandry. I think we start shifting a meat-focused culture by educating people about health, environmental issues, and implementing agricultural and economic policies that promote a plant based food culture.

    Do research via the web and find out what farmers markets or groceries farms sell to and purchase food from these locations. If possible, do business directly with the farms.
