I have been eating at least one vegan meal a day since the beginning of the challenge, mostly salads and vegetable stir-fries with either toasted bread or pasta/rice on the side and it gets easier everyday. I hope to become a full time vegan by the end of this year...

I explored transport solutions today and it was counter intuitive to me that in the grand scheme of things cutting food waste at the global scale will have more impact than curbing emissions due to transportation, even with very aggressive goals in transportation...

There is no federal regulation about sell by or best by date labeling of food product. I learned that the dates shown are for food quality not safety.

I finally understood the difference between conservation agriculture and regenerative agriculture. In the former case you avoid erosion by not tilling and using cover crops, in the latter you go further with biosequestration in order to increase fertility and water retention, using compost. I also learned that about 50% of the soil carbon has been released into the atmosphere so as this practice gets more widely used, there is a potential for removing a large amount of CO2 from the atmosphere.

I have managed to shop  minimally today at the supermarket with only a basket at hand and the only food waste for the week was leftover bun and French fries and two rotting apples.

Compared to a decade ago, it is easier to be vevegetarian and go out for a meal, almost every place has now a vegetarian option. I wonder how much longer we will have to wait for the same restaurants to offer vegan alternatives in their menu. Maybe one new eco-challenge can be leaving comments/suggestions each time you eat out  asking for vegan options to be added to the  menu

I chose to participate because I have read the book Drawdown and I really want to see these common sense solutions be adopted by a big majority. Change starts with each and every one of us.
