This challenge has been inspiring to participate in and has certainly showed me how I can improve reducing my carbon, waste and pollution output in a whole range of ways. I feel like I need to do much more planning with my family to meet a full 3 weeks of vegetarian dinners, but we have found some vegetarian and vegan family favourite meals, I have been more diligent with composting, and tracking my food waste has been a real eye opener. This challenge has coincided with the plastic bag ban about to be brought for all shops in our state, and it’s great to feel that momentum is building with more and more people I know trying to reduce single use plastic consumption on top of the plastic bag ban. I am keen to take on another DrawDown EcoChallenge and maybe recruit a team from my workmates and other friends and family. Thanks Heidi and Team Climate KISS

Thanks so much for being part of it Fflur! I also hope there is another Drawdown Eco Challenge and maybe next year we can all be team leaders with competing teams to inspire others. I am hoping I can keep up my vegan./vego meals, plastic reduction etc. on an ongoing basis. Big love. Thanks! xx Heidi

My husband made a delicious vegan sweet potato Succotash from the Vegan on the Cheap cookbook I bought years ago. It’s a new favourite and we have had it for dinner a couple of nights and its my lunch today. I put off making alot of recipes from the book previously because it has stuff we’ve never used before or which is harder to source, especially for making sriram like nutritional yeast and viral wheat gluten. I bought a tofu satay Bahn mi for lunch yesterday too so I had 3 vegetarian meals yesterday. Now I’m dreaming of vegetable green Thai curry

Yum! Great to hear you've found the time to source some of the specialist ingredients :) I think I am going to look up good tofu marinades. in order to try something new...

Also I have been saving the aluminium foil from Easter eggs to keep the foil together as one big lump - it’s more likely to be separated at the recycling plant that way

I have been diligent in making sure I compost food waste this week. Including making the extra effort to take my Apple core to the worm food bin at work which is in a different room.  I do need to remember to leave our cloth and mesh produce bags in the car so if either my husband or I do an impromptu shop we don’t bring home plastic bags. Also I need to take my huge stash of soft plastic bags to the RED recycle bin - our closest bin is at one shop outside Coles and I forget to put the stash in the car too

Well unfortunately I didn’t sit down to meal plan ahead of this Monday with my husband and so I have only had 1 vegetarian meals instead of 2 out of 3, both yesterday and today. Got to finish off the meals that we have cooked. Yesterday at lunch I stopped at a bakery lightheaded at 3pm, and they had no vego options so I got a meat pie. Planning on making a big batch of lentil and bean chilli tomorrow

We do have to be a bit more prepared when we would like veggie options not meat laden ones, don't we? Either making things from scratch or buying suitable ingredients. It would be wonderful if there were more nutritious and interesting vegetarian options within easy access at cafes, etc. Lentil and bean chilli sounds yummy. :)

I spent my lunch hour discussing this challenge with a coworker and discussing what we already do and how we can improve our carbon drawdown

Great to know that your are talking about the Drawdown EcoChallenge with your colleagues Fflur. I think its a great way to engage because its focused on solutions that are good for our future climate and also for people, communities, economies now. Great stuff!
