REFLECTION QUESTIONFood Zero-waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Lisa Fabiny 4/12/2018 9:25 AMI had about 6 stalks and leaves of chard that were wilted. Usually, I would throw these away, but after watching the video, I was inspired to chop them up (including the stalks) and saute them simply with onion, oil, salt, and turmeric. This ended up being a delicious vegetable serving for two dinners this week! -

Lisa Fabiny 4/05/2018 4:43 PMI had never heard of this before. It makes sense and seems to be going back to the old days of heating with wood. One concern/question that came up for me as I was watching the videos and reading about this technology: I wonder if using all of the wood waste from other activities, such as building, allows those other activities to go on as is without causing them to think how what they do impacts sustainability. -
