I have been doing research on maximizing the small yard space I have. By building a raised bed and making vertical herb/ veggies boxes, I can grow a lot more of my own salad s.

    Food Support Local Food Systems
Dependable fresh food, supporting local farmers and building resilient communities are just a few benefits of local food systems. Which of these advantages inspire you the most?

Although it is MMmore expensive to purchase a CSA share with aalocal farmers, I know that the food is good for me, the price is more in line with aarealistic cost to the production and the farm is close enough I can go visit or help pull weeds!
  • REFLECTION QUESTION
    Food Smaller Portions
Fun fact: Your brain and stomach register feelings of fullness after about 20 minutes of eating. While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come out of this?

I'm sure I'm also losing some weight! I'm talking with my family more during the meal and taking longer with each meal yet getting full on smaller portions.

How difficult or easy was it to change your diet?

I no longer purchase bananas- because I live in Alaska they are basically bathed in oil just to get here. Now that I have researched how destructive it is to grow them, I feel that I am doubly justified in substituting apples for bananas in my daily purchases!

How can you ensure that your virtual meetings honor your values and your company's culture?

    Susan Kobierowski 4/21/2018 10:19 PM
I do not have a job that requires meetings- either on site or off- but I do belong to a band and I meet with other band members via Skype to practice once a week. I also take lessons via Skype from an instructor in Queensland, New Zealand which of course would be virtually impossible if not for virtual meetings!
  • REFLECTION QUESTION
Women and Girls Support Women-Owned Businesses
Globally, women typically invest a higher proportion of their earnings in their families and communities than men. How can you better support communities by supporting women?

    Susan Kobierowski 4/21/2018 10:13 PM
I support several women owned businesses in my area. It is difficult to know who owns  businesses unlessthey are local, so it makes it easier for me to support both local and women owned at the same time!

How do your transportation choices affect your engagement in your community? Does your experience differ while walking, riding transit, biking or driving?

I have started to walk to and from work daily since the beginning of this challenge  and I have discovered that I am more relaxed when I arrive at work! I listen to the birds as I go through the neighborhood and seem to greet the same people daily who are also out and about while I am. I have met folks in my area I wouldn't have otherwise and feel more connected to the area now that I am actually IN it!
  • REFLECTION QUESTION
    Food Reduce Animal Products
What do you think contributes to people in North America eating more meat than other countries, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?

    Susan Kobierowski's avatar
    Susan Kobierowski 4/21/2018 9:58 PM
I believe that in the USA we have cheap and easy access to meat- eating meat has been seen to be a diet for the rich and elite (and who doesn't want to be that!) I hope that eventually meat will not be subsidized by allowing grazing on public lands so the purchase price will more realistically reflect the true cost of meat. The cost of treatment of the waste from meat processing must be included in the purchase price at the store.
  • REFLECTION QUESTION
    Food Zero-waste Cooking
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

    Susan Kobierowski's avatar
    Susan Kobierowski 4/21/2018 9:38 PM
I am more aware of the packaging involved in my food purchases- if I can't eat or reuse the packaging (or my worm farm can't) then I don't purchase it. I am only eating vegetarian foods and feed any parts  I can't to my worms.

How are environmental issues like black carbon and other emissions from cooking fires or rudimentary cookstoves also human health and social justice issues?

I backed a kickstarter project to develop solar cookstoves for use in camping or areas of the world that don't have readily available fuel supplies. I am a sponsor of the "GoSun Go" thru www.kickstarter.com. (One of 2,683 backers!)
