    Are bamboo alternatives readily available in your community? If not, what are other sustainable alternatives?

    Bamboo is just becoming available in my community and I will be using it to build 2 outbuildings this summer.

    How is your diet currently impacting deforestation? What can you do to decrease your negative impact and increase your positive impact?

    It makes me uncomfortable knowing that my diet-choices contribute to deforestation. I'm still researching alternative options that will decrease this aberration. I've found a few companies that are "green" and "eco-conscious" and are able to meet a few of my dietary restrictions. 

    I'm thinking about meeting with some of my friends & discussing options and actions we may be able to take.

    How difficult or easy was it to change your diet?

    It blew my mind the amount of deforestation that has occurred to contribute to my favorite beverage! I switched from my big-brand coffee to SF Bay Coffee Co, which provides a eco-conscious alternative. While it's not an espresso from my favorite stand, it makes me feel a little better.

    Fun fact: Your brain and stomach register feelings of fullness after about 20 minutes of eating. While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come out of this?

     By using the smaller dish, we also downsized our portions, allowing us to burn more calories than we consumed. This resulted in some much needed weight loss. I believe this trend will become a routine/habit in my house.

    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

    I used the entire potato, celery stalk, and shallots when I prepared a pot of vegan potato soup.

    I found that if I prepare & plan my meals a week in advance, we could prevent waste. 

    The average person wastes 650 pounds of food a year... which is ridiculous.

    Growing up on a farm in Idaho. I have always enjoyed growing my own organic vegetables and composting our kitchen waste back into my garden. I grew up being aware of what we were using and how and have done that also in my adult life. I have now got rid of all my plastic products in my kitchen for leftovers and switched to glass! Mason jars are great for storing things in the fridge!

    I'm guessing women are more nurturing and see the value of investing in family/community for long term benefits vs. individual profit.

    What do you think contributes to people in North America eating more meat than other countries, and what does this say about North American values and ways of living? How do we start shifting a meat-focused food culture?

    Meat is readily available in our country. Hunting, fishing, ranching, and farming are part of the fabric of who we are as a nation.
