Test Test 4/25/2018 10:12 AMI found a video on how to grow additional veggies from veggie scraps. We are trying some...like celery, potatoes, lettuce, etc. instead of throwing away the "seeds" we are placing in water and soil, prepping for planting this spring. No more food scraps ;-)-

Test Test 4/17/2018 9:44 PMSince I walk to school to pick up/meet up with our son, I walk our dog and we meet up with lots of neighbors on the way. It's nice to catch up with our friends and I enjoy interacting with the kids and it is a refreshing break from work...getting outside and chatting with neighbors. I often get new ideas and feel more productive when I sit down to work after walking and being outside.-

Test Test 4/17/2018 9:35 PMI have started meal planning with my neighbor and we go to the grocery store together. Also, our son walks to school every day and next year we plan to carpool to middle school with a couple of neighbors. In addition, since my car died, I have been carpooling with our daughter and being more efficient by dropping off library books on way to gym, etc. combining errands while carpooling.-

REFLECTION QUESTIONFood Smaller PortionsFun fact: Your brain and stomach register feelings of fullness after about 20 minutes of eating. While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come out of this?

How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Test Test 4/17/2018 9:27 PMI cook potatoes with skin on now and use all of the green onion, etc...loving using every part of our favorite veggies. Also, being better about buying just enough for meals and freezing rest so it doesn't spoil in fridge. I started getting together with my neighbor and we meal plan together, carpool to grocery store and meal prep together. It's fun and we share new gluten free and vegetarian recipes :-) -

Test Test 4/16/2018 4:55 PMAt first I was skeptical of the light rail being built so close to our neighborhood...but I absolutely love it now. When it was first built near us, our kids were younger and I found it difficult to work and get the kids where they needed to be via light rail. Now it's fun to take the family downtown and I plan to take light rail to the airport tomorrow! I'm trying to use it more.-
